Our bluefin tuna loins have a perfect colour, flavor and texture. Through our stress-free catching technique, we avoid the appearance of "Yake" (burnt meat in Japanese), produced by the excitement of the tuna when they sense they are being captured.
All animals, feeling in danger, defend themselves and fight. Your muscle tenses and secretes lactic acid. This produces an unpleasant taste on the palate, a hard texture and a brown color in the meat that gives it an unappetizing appearance.

Why a tuna stunner
As is done with cattle in slaughterhouses, we apply a small electric shock with the tuna stunner as soon as the hook is taken.
Instead of lifting the tuna on board by force, our tunas rise to the surface by buoyancy.
