It is found in the jaw of the tuna, between the head and the body. It contains the lower jaw and the collar of the neck.
It has a strong strong umami flavor, so there are people in love with it. Like morrillo, it is very rare to find because you can only get two small pieces from a single tuna.

This certificate is the most prestigious and rigorous in the world in sustainable fishing. There are only two other bluefin tuna fisheries in the world that have it. Our bluefin tuna is sustainably fished under strict quota regulations, catch standards and traceability controls. We use a fishing method that minimizes the animal's stress and we apply techniques that maximize the quality of its meat, such as the Ike Jime method.

In any case, and as with any fresh produce, the following recommendations should be followed for its correct maintenance and consumption:
Shelf life: 7 days in the refrigerator at 4ºC from the date of cutting it.
· Always use the proper conservation technique (isolate from the air to prevent oxidation, wrapped in blotting paper or film and keep refrigerated from 0ºC to 4ºC).
· If it is going to be consumed raw or semi-raw, freeze for at least 5 days at -20ºC. In the event that freezing below 20ºC can be guaranteed, 48 hours would be sufficient.

Direct sale, fresh and without intermediaries. We do not freeze. We fish and bring it fresh from the sea to your table. We serve the product in perfect conditions for consumption.
We sell fresh fish product on request. We do not have frozen product in stock, in general our delivery times can vary from 2 to 4 working days from when the order is placed. On very special occasions, orders placed on Monday, Tuesday or Wednesday before 12:00 p.m. will be delivered on Friday of that same week. Orders placed on Wednesdays after 12:00 p.m., Thursday, Friday, Saturday or Sunday will be delivered on Friday of the following week.
