We have developed our own fishing technique known as the 5 Mackintosh Steps, consisting of a stress-free catch for the tuna, Ike Jime sacrifice, total bleeding, evisceration and controlled chilling. All of this is done on board, by hand and one at a time immediately after capture. The objective is to treat the product with the utmost respect and to achieve the best possible quality.

MSC Sustanible Fishing Certificate
We have started the full evaluation process under the MSC sustainable fishing standard to certify our bluefin tuna catches. The MSC label certifies sustainable and well-managed fisheries. If the evaluation is completed successfully, we will be the third bluefin tuna fishery in the world to hold it, the first one in Spain, and the first fishery of any marine species in Andalusia with this prestigious certificate.

What does fish on demand mean?
We fish only what we have previously sold, thus avoiding the serious consequences of overfishing. Before going fishing we know the amount of tuna that we have to bring back in that working day. Contrary to traditional fishing, where everything that can be brought is caught, regardless of whether it is going to be sold or not and at what price. We have a fixed price, we do not go through an auction or work with intermediaries..
Will I receive my order in optimal conditions for consumption?

What is low-combustion smoked?
In addition to fresh bluefin tuna, we also sell bluefin tuna natural smoked with oak, beech and low-combustion Rioja Alavesa barrels, conservatives and colouring free. Low combustion is flameless smoking. The wood is heated just before the flame sparks, thus preventing the product from burning and acquiring a charred aroma.
